Salted duck eggs can be made in 2 ways: brine and dry brine/ salt-cure method.

[Ingredients]
Salt-cure Method (This recipe makes 10 duck eggs) :
Chinese Spirits (50~60°) 100g (½ Cup)
Salt 200g (1 Cup)

Brine Solution Method (This recipe makes 10 duck eggs) :
Water 1.5kg (1.5L)
Coarse Salt 650g (3 Cups)
Chinese Spirits (50~60°) 100g (½ Cup)

這是我常用的方法:
1) 美加地區鷄蛋都洗乾净才上超市, 不用再洗
2) 鹽, 水, 1 :6 比例, 燒滾,加鹽, 攪匀,放涼, 可以加一湯匙白酒,
3) 鷄蛋小心放好在玻璃瓶裏, 盡量用新鮮的鷄蛋, 加鹽水,可以放一小碟子在上面將蛋全淹沒。

想请问下 前几天没有能抵制细菌的时候可以放在冰箱里面腌么 过后拿出来室温腌 因为现在马上夏天了 室温比较高
