For anyone wondering what it tastes like, it's a lot different from what you'd expect. It's not funky or sour-tasting at all like most fermented foods. It's basically a more intense egg flavor with nutty notes, and the yolk has an extremely smooth consistency similar to warm peanut butter. I didn't like them when I was little, but now I can snack on them plain.

“Century egg” is a name invented in recent decades by foreigners. The Chinese name is “pi dan” which literally means leathery egg, referring to the rubbery or firm gelatinous feel of the egg white.

Chinese farmers invented this as one of the ways to preserve eggs (the other being salted eggs). Even as recent as 100 years ago, China had to deal with external (invasion from nomadic tribes such as mongols in the north) and internal (bandits and uprisings) conflicts. Farmers had to find ways to pack up their belongings and run when needed. Fresh raw eggs are difficult to carry and kept fresh w/o refrigeration. So we end up with various kinds of preserved eggs.

I've never seen one with a yolk like that first one. I've heard they're often enjoyed with rice porridge for breakfast, especially in cold weather months. I've never had one but I'll try anything once!

In my hometown, this is called Pine flake eggs, because when you peel the shell you should see some pine leaf pattern on the egg. Search for pine flake eggs in google, you will see some pictures. I only use 3 ingredients in my dipping sauce, that is balsamic vinegar or black vinegar, grounded ginger roots and a little bit of sesame oil. Don't panic folks, just different food from the other side of the world. 😂
