I just discovered these last month. I would normally use smoked turkey drumsticks, as i was looking I came across the tails. I tried them with my collards. As they got finished cooking I sampled as i've never had before.. These turkey tails will change your entire cooking experience for the better. I kid u not. I make sure I eat one alone because I have fallen so in love with them. No more will I eat the smoked turkey wings or drumsticks. The smoked turkey tails are the way to go for sure

I love turkey tails with steamed rice. I usually boil mines before baking it. Heres a polynesian recipe. Grab a bucket. There is no measurement to this recipe. In your bucket add a whole bottle of soy sauce, add in minced garlic, chopped scallion, then add some water (make sure its enough to balance that soy sauce) then add in brown sugar (like a quater of the bag or half) put the turkey tails inside. Let it miranate over night (no need to refridgerate) it can be Bar-B-Qued or baked. If your baking it (boil it with the sauce) make sure the sauce is over the limit of the meat when pouring. The purpose of boiling it is soften up the meat. Stick that boiled thing on a baking tray then your good to go from 350 to 450 cook until its crispy caremalised. When your grilling it you can use the sauce as well when the meat is cooked you dip it in the sauce, and put it back on the grill to make it a little crispier. Hope you understand. Good video boss!

When we lived in California it was easy to find them in packages. Up here in Seattle they are harder to find but sometimes if you have a market that breaks down whole birds themselves and sells backs, necks and turkey soup bones they will include the tails. Or you can buy them from some markets and restaurant supply stores by the 30-pound case.

We do a dozen birds a day in our restaurant so we always have plenty -- but they go fast. We do them roasted, smoked and Buffalo Style.

I boil mine till done. ..pour off most of the broth and season with garlic... seasoned salt..and black and cayenne pepper..add a little of my special bacon fat..and steam potatoes and green beans and onions in the same

i buy mines at the store and they are pre cooked what should i do to cook them and keep the flavor

No adjustment necessary although I'd brine the necks first. But do try the tails too. I don't think they'll be too fatty but they will give a richer flavor.

So can you do the same thing with turkey necks? Would I have to add anything to compensate the fat lost or change the smoking time in order to have tender smoked turkey necks?

So how should I adjust your recipe to compensate for less fat for the turkey necks? Or should I just use turkey tails, which honestly I have never seen here (in VA)? Do you think the turkey tails would be too fatty for simple bean dishes, rice and greens dishes?

Necks are almost entirely bone and have almost no fat, so it would be a completely different experience. They'd be great to flavor a stock, though. Not sure they'd be worth the trouble if you wanted to eat them, although I've spent a fair amount of time picking the meat off of them in my day.

Oh ok well I have been trying to find a smoked turkey neck recipe because I hate having to rely on the store bought ones alone and just want to learn to make them at home. I find it's a good substitute for pork in bean/rice recipes for my family members that don't eat pork for personal reasons.
