On this video, I smoked up Colitas De Pavo aka turkey tails on my Yoder Frontiersman. As far as I know, I'm the first one to smoke Turkey tails on an offset smoker on YouTube, maybe even ever! 👍🏼The rubs I used were Kosmos Q Cow Cover and the flavor was spot on! Total cook time was 4 hours at 250° - 275° The wood I used was post oak. This food takes me back to my childhood days when my grandfather would take me to Juarez Mexico to get my haircut. Afterwards, we'd go eat Colitas De Pavo and bring some home to my beautiful grandmother.

Joe, in '87 I became great friends with a exchange student from Monterrey, Mexico. In '88 I went and spent a month with him there. I was introduced to many old country Mexican foods. Some I liked some o boy. I knew just enough Spanish to get me in trouble. But I knew what a Colitas was and what a Pavo was. It was street food so it was made on open fire and just like yours except the avocado was like a spicy aole. I can still remember all his friends saying "Gringo can eat with us anytime" I love pickled jalapeno's and they could not believe they couldn't Burn me out. We to a meat market and I bought 25# of ox tails and told them I was cooking them Colitas Vaca. They loved it ad got a big kick that I knew some things to cook. I can still hear all the sucking sounds getting all the meat off them sticky ox tails. Really enjoy seeing you cook some of the old country foods.

Joe I’ve never thought about or heard of anyone eating turkey tails. But you really made this look good brother!! Now I gotta go to night butcher and try this! Thanks for sharing this!

Just fyi, I liked this video before watching because you look like you know whatchu doing. After watching, I was not disappointed. Very pleasantly surprised at how much fast rendered off smoking them yourself. My dad buys them smoked at Pyburn's, Watkins, or Fiesta and bakes them to render the fat. Then he adds tails and fat to cornbread dressing with a few other things. Best stuff you wanna put in your mouth.

Well Ok Joe you brought back memories of my Grandmother may she R.I.P , she loved the Turkey tails and the Chicken tails and use say that was sweetest part of the bird I remember her roasting them on something call a coal pot . Those Turkey tails look really delicious and that sandwich OMG! is the BOMB! have a great Sunday you and your family.

I really hate living in a small town. None of the grocery stores in my town sell turkey tails. As a matter of fact, I had never even heard of them.

That's a first timer for me too. I know what they are but never saw anyone cook or eat them. You made the meat look pretty good. If you served that up to most people who were not raised eating it looking like that, they would gobble that up and love it. Nice informative video. If I will eat fried rattlesnake nuggets, and fried gator tail nuggets, this should be easy. lol
