Healthier take on mashed potato’s & gravy 🥔

Wash, peel and cut 4-5 large russet potatoes into small chunks, boil in salted water until nice and tender.
While your potatoes are cooking lets prep for our gravy:
mince 6-7 cloves garlic
Shred or chop about a half an onion
and finely chop 3-4 sprigs each of rosemary and thyme.
Set these aside and place a pan over med-high heat. Add oil, then ½ your garlic and herbs, and all your onions! Cook this all together for about 3-4 min until the onions become translucent.
Now let’s add about 2.5 cups stock/bone broth and 1 Tbsp soy sauce and a big pinch of salt and pepper.
Bring this all to a low simmer for about 15 min. Once the sauce has reduced about half the amount we are going to add 1½ cups of the mashed potatoes. Stir this all together, then remove from heat and set aside to cool.
To finish the mashed potatoes:
Place a pot over low heat and 2 Tbsp butter. Once it has melted add the remaining garlic, herbs and 1.5 cups stock/bone broth.
Once this is all stirred together we are going to remove from the heat and add the rest of our potatoes.
Add salt, pepper, ½ cup light sour cream, a generous sprinkle of onion and garlic powder!
Optional: add 1 cup milk of choice for even creamer potatoes!
Now grab that hand mixer and go to town, Boom!
Now grab your blender and add the gravy mixture. Blend this together for 15-20 sec. you’ll see the color and texture change.
Chicken: Season both sides with garlic dash, salt and pepper. Cook in the air fryer at 390’F for 8 min per side (or until internal temp of 165’F)
(Whole recipe makes about 4 servings)
Macros: 1/4 mashed potatoes, 1/4 gravy and 4 ounces chicken.
