My Dad was a butcher for 40 years and that was the knife of choice. Flexible, sturdy and easy to maintain.

There was this guy who would show up for his shift every day at 4 am at the hotel to prep the soups, and stocks for five restaurants. He would brag about the production he could get done with the simple cheap tool he brought in to do his job. His prized "dollar knife".

This is probably the best video I've seen on how to use a knife and what is the best one to use for cutting meat. I've looked and looked and looked on YouTube to see what kind of knife I should get for making carne asada and realize this is the best knife to get. Easy-to-use, easy to hold, and easy to cut. Thanks for helping me make my decision! I'm getting a boning knife

My old man worked in slaughter houses as on the killing floor and in the boning room, a boning knife is about all he reaches for in the kitchen now

I use a honesuke, but similar concept. The boning knife is better for reverse cutting, but I prefer the precision of a single bevel, stiff blade.

Other than a Sawzall for cutting through big bones, a skinning knife for parts of getting the hide off, and a breaking knife/cimeter for doing the large primal cuts a semi-flexible 6" boning knife is all I use from chickens on up.
