I just made a cheesecake with a graham cracker crust in a spring form pan that I put a double layer of extra wide aluminium foil underneath. Baked it, and when I took the pan out of the aluminium foil, the foil had a lot of water in it and my crust is really soggy. I’m not sure how water got in there; has this ever happened to you?

Thx so much for making this vid! I have one baking in the oven as we speak -- a small thin chocolate peanut butter cheesecake (i like to experiment starting from a recipe that looks good, and then i modify with add-ins, just eyeballing it usually and tasting as I go, and it usually works out, lol).

Using a small pie pan which isn't even filled that high, baking at 310 convection on, and at high altitude, so of course my bake time will be very diff than a regular sized thick cheesecake given all those factors plus the added ingredients, so I definitely need to go by what it looks like vs time (which of course you always gotta do with baking and just use the time as a guideline).

Anyway, I just looked up several sites and pics and then watched like 2 other vids but none were really showing it while it's still in the oven and when and how to take it out for best results. Thanks so much, just subscribed. :)

Hi, from 2.03 minutes of the video, it seems that you are using something else besides foil, can you Explain what it is?

I do not prefer foil as water always get in no matter how many times I stack the foil.

I just came across this vid and I think it would be easier to flip the bottom pan, to the clean flat way when you remove the spring belt you can simply slide the cheesecake onto display tray. Should reduce the need to flip it :)
