How to Use Leftover Ingredients (My Framework)

This is NOT a recipe... it’s a framework.

Sometimes it’s amazing, sometimes it’s just ok... but it’s always better than wasting your leftover food.

8 Step Framework

1 Brown the protein/uncooked main: 
Pork, Chicken, Beef, Mushrooms, Eggplant, Zucchini
2 Add aromatics: 
Onions, Carrots, Celery, scallions, shallots, leeks, ginger, garlic, sweet peppers
3 Flavor bombs: 
Garlic, Peppers, Spices, Herbs, Seasoning Packs
4 Soup base: 
Tomato Sauce, Chicken Stock, Vegetable Broth
5 Taste and adjust: 
Salt, Pepper, Herbs, Spices
6 Add things that boil: 
Pasta, Dumplings, Beans, Potatoes, Frozen Veg
7 Simmer as long as the items you added in step 6 NORMALLY cook for.
8 Add anything fresh: 
Spinach, cheese, spring onions, kale, croutons

One night I was making braised Beef Shanks w/ Cauliflower Purée, but for some reason the latter just was not coming together that night, and dinner was already running late as the shanks took a lot longer to tenderize than I’d anticipated. We had no other rice or starch, no time to run to the store.. all we had was a bag of frozen peas n carrots that we heated up, and when broken up w/ the beef shanks & drippings made for something that felt like a cross between beef stew and the bottom layer of a shepherd’s pie. Definitely a happy little accident 😊

I have soups running permanently. Or at least stocks. So simple. Most scraps go into a meat base, veg go into the veg base. To make a quick meal, soffritto, meat, stock in dutch oven and cook.

The low sodium version of that Better Than Bouillon is so much tastier, trust me. If ur worried about it not being salty enough, know that you can just add more of it, and it will have a far better salt to umami ratio.
