This is interresting Mandy; my Southern US mother taught me to zest the lemons to remove the flavorful yellow rind from the bitter white pith and use only the rind to make lemon jam. Your technique is a labor saver.

I try to eat a fresh lemon every day. It makes me feel so good. It helps my digestion too. Plus some naturally derived Vit C.

You could also put the lemon halves into a mason jar and add a good amount of coarse salt. Salt pickled lemon rind, finely chopped, is great for several dishes like curry or chicken and lamb stews or fish. Keeps in the fridge a long time.

You can do this with any citrus. Pink grapefruits are delicious!!! Candied citrus peels are such an inexpensive, yet fancy gift durning the holidays if you are into homemade gifts. Love doing this. Hope someone tries it.

I do something similar except I use salt and make preserved lemons. (And use more of the lemon flesh as well bc the juice and salt turns into the brine to break down the rinds). After a few weeks of sitting in the salty lemon brine, the rinds are so bright and delicious. You can add them to fish, chicken, salads, make dressings with the brine-- they're one of my favorite things to have on hand to make simple inexpensive food delicious!!!

I've been making lemon orange peel jam/preserves for 23 yrs. I just thought no one would be interested because it involves WORK (not much, but work still). I use brown sugar instead because it takes less sugar to sweeten (because it's less refined/less processed).

I add persimmons when they're ripe or apples if I have any leftover from my pie filling.

I usually gift it when I give my homemade banapple (banana & apple) or yumpkin (yam & pumpkin bread) breads.

I wash all fruits (even those with rinds, like lemons and oranges, that are usually not eaten) with baking soda & a cap of lemon juice and a sprinkle of water. Swoosh and flip around, then drain. Try it, then look at all the grunge that rinses off.
I even do it to my salad that has been 'prewashed' 🙄

I used to rinse grapes with water only, but my throat kept a tickle after, even organic. I started rinsing with the baking soda & lemon juice (just a capful) and rinse with water.
Haven't had any tickles for over 5 years..

In the uk we call this marmalade … and you can make it with all citrus fruits.

I also blend used rinds into a lemon spray mixed with liquid soap and water to use as a cleaning agent and it kills bugs on contact!
If I make a jelly I have to use Srevia or other sugar alternatives as I'm
Diabetic... but we do make lemonade quite often using the Stevia mainly! 😋

We do that with grapefruits we do the same process by boiling a few times to remove the bitterness then we add sugar, cinnamon and vanilla.😅 extract.

Thank you. I love lemon marmalade and have been thinking of making it due to the high cost, but I don't really want to get into a lot of canning. This is perfect. I have lemon trees. I've been throwing out the rinds. I could make enough at a time for current use and all I would need to buy is the sugar.

I freeze my lemon and orange rinds from my tea and when i have enough i put in a large pot of water on stove and let simmer. This puts out much needed humidity for me and my plants and scents the air beautifully.

Thank you thank you thank you thank you. I learned this when I was very young and I forgot the steps. The soaking for the bitterness is the most important part. Do you put salt in it? I know someone who put a pinch of salt in the water and she said it worked better
In any case thank you thank you thank you thank you and you can do this with oranges from what I understand and grapefruit and limes to whoever is going to do your jam. This is such a treasure. Thank you again.
