Yes, is great when you're simply start off. It's probably great in 99% of the situations where you encounter inclines. However, it brings to mind a time when I was parallel parking on a steep incline in Seattle. I can't see how I would have managed that without an (old style) emergency brake that allowed for GRADUAL release. Thoughts?

The method with the parking brake is really not how it should be done. Over here, you'll have to do a (small) hill start on your driving test, and I believe it's automatic failure if you do this.
Just get to know the clutch a little bit, and know where the biting point is (in a gas car it's usually at the end, in a diesel it's often in the beginning). Hold the clutch at the biting point with your foot on the brake. This is harder in a gas car because they have less torque and you can't really feel it, however, if you pay attention, you will feel it and you can see the RPM's drop (the car may rev up a little). Don't release the clutch too far because you will stall. It's a piece of cake in a diesel car.
Then, when you release the brake, the car will stay still or maybe creep forward just a little bit. Give it enough gas and keep on releasing the clutch. (don't hold the clutch too much at the biting point though, because it's slipping... do this for like 5 sec max).
It requires some practise, but that's the right way...

[0:27] Incorrect for a manual with standard handbrake.
The car should be held on the hill by the handbrake. When moving off you release the clutch, feel the engine biting and release the handbrake whilst giving gentle throttle and move off.
In the UK if we did the hill start as you suggested you would fail your driving test.

I found that once you step on gas. even the clutch is still not released. the hill assist will release the brake right away and not hold anymore. do you find the same with yours?

Horrible feature. Just bought a 2020 jetta. My brake doesnt disengage untill after im already trying to give it gas a couple seconds, resulting in me driving with the brake engaged and sometimes the car just dies. Vw cant shut it off because its a “safety feature “ Ive never felt more unsafe in a brand new vehicle. I have to slam the gas pedal and pwer through the brake or have my car die on me, on a hill, with cars behind me. Ive been driving manuals for 25 years.
