Today we are making some Vegan Breakfast Tacos that are friggin' scrumptious as heck!

My goal at THEE BURGER DUDE is to show vegans and non-vegans alike how easy it is to make delicious and decadent vegan meals. I used to eat a lot of meat and dairy before going vegan, so this channel is aimed at people like myself before going vegan. Additionally, I totally welcome any vegans who might be missing one of their favorite fast food or comfort food meals as well, come on in! I want to show that you can still have burgers, mac n' cheese, fried chick’n and any other kind of comfort food, and that it’s possible with plant-based ingredients.

I make tofu scramble all the time, keep it in the fridge and reheat each morning. I put the silken tofu (any kind really, or regular soft tofu) into a blender and add all my seasonings with just a bit of plant milk to get the blender working. After sauteeing the crumbled tofu, I add this mixture and let it cook until the consistancy I like. I’ve already sauteeing a pan full of veggies until still crisp then add that to the cooked tofu.

When I was still an omnivore, our restaurant made these tasty Korean breakfast tacos with pulled pork, eggs, pickled onions, cilantro, and a house made chogochujang. Totally gonna make them vegan now.

As a Texan, I somewhat object to the way the Austin style taco was made. We usually cook them kind of mixed and it really changes the flavor somehow. With bacon a lot of places do put strips on but the egg is always cooked in the bacon grease. I usually use Beyond sausage, chop them in as the potatoes are almost done, then pour the eggs over the top and cook it all together. That’s our style 😊 but all look great!

Edit: Will be trying that sauce. 🤤 Also, if folks can’t find the Impossible sausage (I can’t, yet), skin the Beyond breakfast links. Amazing & same consistency! I make patties out of it, too, because I like them better than their patties. …And tots totally rule here! Love em in my breakfast burritos!

I freeze extra firm tofu. And hand squeeze it over the sink after it's been thawed. I find you have to season more if the moisture is kept in.

Defrost the potatoes in a microwave first, I do that with shredded hashbrowns to pull as much water out as possible and I gotta say when I fry defrosted hashbrowns up they're amazing. Perfect amount of crisp to starchy potato ratio

I use this method for air-fryer home fries:

Wash & scrub potatoes, cut in half lengthwise, microwave covered on a plate for 5 minutes.

Let potatoes cool and dice to your preferred size.

Toss with oil in a bowl and season with kosher salt. Keep bowl oiled.

Air fry for 20-30 minutes at 400°F, giving the potatoes a toss in the oiled bowl 2-3 times as they cook.

When they’re nearly done, toss with additional seasonings of your choice and then finish off in the air fryer.

It leaves you with wonderfully crispy potatoes with soft, pillowy insides. Whether you peel the potatoes or not is up to you. You are after all the Christian Slater of your air-fried taters.
