What you’ll need:
🍅 2-3 Corn tortillas
🍅 1/4 cup tofu scramble per taco
For the fofu scramble: extra firm tofu, mashed and mixed with 2 tbsp nutritional yeast, garlic, onion, salt and pepper.
🍅 Top with homemade corn salsa: corn, diced tomato, cilantro, sliced cabbage, grated carrots lightly tossed in olive oil and a dash of hot sauce.
