Question. If the dough ends up being rolled longer/thinner, what's the purpose of those initial folds?

I had a hard time getting the baguettes stretched out. They kept snapping back. Any tips? Did I maybe ball them too tight in the initial shaping step? Love your channel and blog BTW!

Each end is a conical sprig. You gotta use your WHOLE HAND as you roll it. I don't want my baguette to have squiggly genie-tail ends and neither do you.
