Thats why I like to loosen each string a little at a time until there is no tension on any string. Then you can just snip them all off and re-string.

I just unwind all of them. I’m sure I’ll make a mistake if I put one string on and then start the next I’ll end up removing a fresh string somehow. Plus you can’t clean your fretboard or polish your frets or anything if you don’t take all the strings off

When I wind them after I give them the wrap around the high strings always fly out of the thing :/

You need to put a 90 degree bend on a wound string before cutting it or you'll compromise the windings.
