My Favourite Kale Salad

1 bunch kale, stems removed
1 honey crisp apple, diced
½ shallot, diced
4 sundried tomatoes, diced
2 tbsp hemp hearts

Dressing:
½ cup extra virgin olive oil
2 tbsp fresh lemon juice
2 tbsp apple cider vinegar
2 tbsp honey
1 garlic clove
½ shallot
1 tsp Harissa paste, or any chili paste
1 tbsp Dijon mustard
2 tbsp pecorino romano (or parmesan)
½ tsp black pepper
1 tsp salt, or to taste

Sourdough Croutons:
2 cups stale sourdough bread, cut up small
3 tbsp pecorino romano (or parmesan)
1 tsp granulated garlic
1 tsp paprika
½ tsp black pepper

½ cup roasted walnuts, toasted with 1 tsp olive oil
