Apple Kale Salad with Bacon Vinaigrette

Serves 6

Ingredients

3 bunches of Dino Kale
(Washed and torn into bite size pcs)
2 apples
(Thin sliced)
1 lb bacon
Mixed nuts (Sahale brand)

Bacon Vinaigrette

Makes 1 cup

1 teaspoon dijon mustard
2 oz apple cider vinegar
3 oz bacon fat
3 oz grape seed oil
2 tablespoon minced shallots
Kosher salt to taste
Black pepper to taste

Instructions

1. Lay your bacon in a sheet tray and bake in the oven at 375 degrees Fahrenheit until crispy. Remove the crispy bacon, strain out the fat and reserve

2. To make the vinaigrette add dijon mustard, shallots, and apple cider vinegar to a mixing bowl. After that whisk in the bacon fat and grape seed oil.

3. Season with kosher salt and black pepper to taste.

4. When you’re ready to serve warm up the vinaigrette over medium heat. Drizzle over your Kale, add thin sliced apples, crispy bacon and mixed nuts. Serve and enjoy

We would do this with cabbage or lettuce. It’s call hot slaw or wilted lettuce. Very good!
