What are the differences between Atlantic salmon and Sockeye salmon?

Procurement:
Atlantic salmon, specifically within the United States, is farm-raised while Sockeye salmon is typically wild-caught. 

Fat:
Because Atlantic salmon are farm-raised, they have a higher fat content than Sockeye salmon since they aren't using their muscles as much. 

Color:
Sockeye salmon is much darker than Atlantic salmon, mostly because of their diets in the wild. 

Taste:
If you're interested in a milder fish flavor, then Atlantic salmon is your thing. Sockeye salmon has a more robust, gamier flavor.

Something to keep in mind regarding the color is it comes from carotenoids in the fish's diet and the desired color is based on market demands. In some parts of the world their desired color is white/grey so the feed has zero carotenoids. That said I usually buy Atlantic because I tend to use it to make sushi and Atlantic salmon as a richer and smoother texture.

An important note is that you cannot eat raw pacific salmon that has not been flash frozen or dubbed sushi grade. Farm raised Atlantic salmon you can.

There's way more to this than a 'short' can explain. Even though, both are in same family, Salmonidae. To add confusion to the mix, an Atlantic salmon is not a salmon at all, it's a trout with the species name Salmo salar. Sockeye salmon, Oncorhynchus nerka is a very oily fish which makes it very desirable table fair. Generally, the longer the spawing runs, the more fat the fish needs to get to its spawning 'reds', or gravel beds. Once the salmon enters fresh water, it stops feeding and lives off its fat reserves. The most desirable salmon species for eating is a silver line caught Yukon River king salmon because it has a very very high fat content to make it journey up river. The Copper River red sockeye salmon is known for its high fat content for the same reason... a long run up the Coper River to the spawning beds. By the way, a steel head trout is not a trout. It's a salmon with the species name, Oncorhynchus mykiss.

Atlantic salmon are the preferred farmed raised species because they grow fast and are generally resistant to many pen diseases. Back in the 60's, of the trout grown in aquaculture conditions were fed crayfish exoskeletons to give their flesh the desired deep redish orange color.

Sockeye is known to be significantly higher in natural parasite content as well. Used to be a sushi chef and I wouldn't eat raw sockeye if you paid me...people loved it too....the parasites are not dangerous as the fish is cured using "super freezing" which kills them all....still gross.

The best way to deal with sockeye salmon is by curing it in salt and sugar then making out of it compound butter
