I like to poach farm salmon - over a bed of thin sliced sweet onion circles, white wine as the poaching liquid. Season with coarse black pepper and Johnny's seasoning. In my microwave - 3 1\2 minutes . Use a 2 inch cross strip - no wider, of the fish. Keeping the fish from touching surface of the covered pyrex small casarole prevents fat explosions.

Now that was a good video; short, and right to the point. Usually I have to scroll ahead for like 2 minutes before they get into the subject matter. Lots of good info in a little amount of time.

Avoid farmed fish. Because of what they are fed you do not get the health benefits of wild fish. You might as well be eating a steak. and speaking of steak, if you want to have some of that be sure that it isn't feed lot raised. Pay a little bit more for your food and get food that is better for you.

No wild salmon sold in stores has swum even a tiny bit in its freshwater spawning river destination. It is all caught in the ocean. Wild salmon can be caught in rivers, but that would be by regular fishermen or native Americans.

Wow. That actually solved a problem for me. I was thinking salmon was insanely finicky when, in fact, it's just that I was treating all salmon the same. 😊

I paddled out to a salmon penin the ocean and while peering over the edge of the floating barrier the feeder boat arrived and the "farmer" started throwing dry food into the pen. I asked him what was in it and he told me a concoction of liver, antibiotics and steroids (to aid faster growth of the caged fish). I won't eat farmed salmon! It's been said that "we are what we eat". Take yur pick.

I actually prefer wild salmon. I've noticed a different taste between the two. The fat and cooking temps and time definitely differ as well.

Where do you test the temp though? Which part of the fillet? Because if I wait for the thickest part to reach 120 degrees F, the thinner part will be super overcooked.

What about wild Atlantic? Hatchery vs Wild? Is this maybe just a difference between 2 fish that shouldn't both be called salmon?
