One more mystery: I over whipped my coconut cream (it was badly separated) and now it’s like a thick blob of coconut oil on top of milk. Can I get it back to a cream consistency?

I have made several recipes that call for cream of coconut and when I read the ingredients on the can or squeeze tube, they had too many extra undesirable additives (preservatives, etc), so I researched and made my own. It was pretty much how you described it made- full fat canned coconut milk cooked down with sugar (I used much less) in a saucepan. So easy and no added ingredients. I wish you might have suggested this alternative. It freezes beautifully too.
