I'm Trinidadian and the way my house hold does it is: green coconuts get their tops chopped open, and you drink the water straight or bottle it. Then you crack the husk open and eat the jelly with a spoon.

Second way with dry coconuts: you break them open along the middle with the back of a heavy knife or something similar, you catch as much water as possible like in this video and you drink that. Where it differs is that we take a tool (an oyster shucker works perfectly) and dig the meat away from the shell, and then we scrape most of the brown grit off the backs of the meat pieces. Then we cut it up into small chunks or grated strips and put it in a blender with like a cup of water, turn it into a pulp and squeeze it through a nutmilk bag or cloth and bottle or freeze the milk for later use in cooking. I put the wrung pulp in like bread or brownies for extra fiber and the baked coconut flavor. Also the cream separates from the water so you can dip out just the cream after 20 minutes or so.
