How I have made gazpacho soup in a blender. This is refreshing cold tomato soup for a very hot summer day.

This refreshing Spanish tomato soup Gazpacho is an ideal soup for a hot day. To make this soup no heat generation is required, all you need is a food processor or blender. Total preparation and cooking time is about 15 min. Serve it chilled in a bowl as a soup with herbs and vegetable toppings or in a glass as a refreshing hot summer day drink. Mix it with vodka, ice and Tabasco and Worcestershire sauce to make a Bloody Mary type of drink, but better :).

Ingredients ( 4 servings )

Roma tomatoes ( halved and cored ) - 2 ½ lb
Green bell pepper ( cored ) - 1pcs
Cucumber ( peeled ) - 2 pcs ( ½ lb )
Red onion ( peeled ) - ¼ pcs ( keep it in the cold water prior for 10 min to take bitterness out )
Extra virgin olive oil - ½ cup
Slice of white bread ( crust removed )
Vinegar ( red, white wine or sherry ) - 2 ½ tbsp
Kosher salt - 3 tsp
Ground black pepper - 1 tsp
Optional: chipotle paste to add some spicy and smoky kick ( I have used 2 tsp )

Toppings: croutons, chopped cucumbers or bell pepper, fresh basil, drizzle some olive oil.

Preparation steps:

Combine all the ingredients in the food processor or blender and process in puree mode to desired texture for about 30 sec. You might need to do it in batches.
Taste it to see if you need to add extra salt and pepper. To add a spicy kick, I added 2 tsp of chipotle paste, but this is optional.
Chill soup in the fridge for at least 2 hours before serving.
Serve cold in a bowl or a glass. It could be served as an appetizer or a side soup. Add toppings of your choice such as croutons, chopped cucumbers, bell peppers and fresh basil.

Gazpacho Bloody Mary:

Chili lime seasoning blend ( for the rim ) - you can also replace it with a mix of salt and pepper.
Lime - ¼ pcs ( for the rim )
Ice cubes ( to fill up the glass )
Gazpacho soup - 2 cups
Vodka - 2 oz
Worcestershire sauce - ½ tsp
Tabasco sauce - ¼ tsp
Toppings: olives, pickles, shrimp, celery stick

Prep steps:

Pour Chili lime seasoning blend into a small plate . Moisten the rim of a glass with the lime and press into the blend mix
Fill a cocktail shaker with ice cubes, add gazpacho, vodka, Worcestershire and Tabasco sauce. Cover and shake it for about 30 sec.
Strain Bloody Mary into the glass and garnish olives, pickles and grilled shrimp.
