Burrata-Topped Crispy Smashed Potatoes Recipe
For the Potatoes:
2 lbs baby potatoes, rinsed
Kosher salt
3 tablespoons unsalted butter, melted and cooled
½ teaspoon garlic powder
½ teaspoon paprika (optional)
¼ teaspoon ground black pepper
For the Topping:
8 oz burrata cheese
2 tablespoons honey, plus more as needed
Coarse sea salt, for sprinkling on top
Handful of pomegranate seeds, for garnish (optional)
1. Place the potatoes in a medium-sized pot, along with a tablespoon of salt and enough water to cover the potatoes by one inch.
2. Bring the water to a boil over medium-high heat. Reduce the heat to medium-low and let the potatoes simmer until softened, about 20-25 minutes. To check for doneness, insert a knife into a potato—it should slide in and out easily when cooked.
3. Drain the potatoes and let them sit for 5 minutes to dry. Meanwhile, preheat the oven to 400°F (204°C).
4. Transfer the potatoes to a large baking sheet. Using the back of a jar, gently smash each potato to a height of about ½ inch. Set them aside.
In a small bowl, mix together the melted butter, ½ teaspoon of salt, garlic powder, and paprika (if using).
5. Brush the butter mixture evenly over the smashed potatoes.
Bake for 40-45 minutes, or until the potatoes are golden and crispy. No need to flip them.
6. Transfer the crispy smashed potatoes to a serving platter. Tear the burrata into small pieces and place a small amount on top of each potato. Drizzle with honey, sprinkle with coarse salt, and garnish with pomegranate seeds, if desired.
7. Serve immediately and enjoy!
