DELICIOUS & EASY Chickpea + Avocado Salad/Wraps, Plant Based/Vegan!

If you’re looking for a filling, simple and nutritious meal, here it is!

Makes 2-3 servings
1 can chickpeas/garbanzo beans, drained
1 large ripe avocado (plus more for garnish)
2 scallions, sliced
1/2 to 1 lime, juiced
1/2 tsp sea salt (adjust to taste)

Mash chickpeas in medium size bowl. Add avocado, lime juice and salt. Mash together then fold in scallions. Adjust lime and salt to taste. Wrap in lettuce, cabbage or on gluten free toast! Top with more avocado!
