As an Indian I request you all to try and saute the onions for a bit longer until they turn golden brown. It makes a lot of difference.

I learned this from an Indian woman who cooked really good Indian food. The best way to do the chickpeas is to take dehydrated ones and let them soak over 24 hours in water. This will make the chickpeas so much better like so much better.

1)saute the onion till golden brown
2)fry the tomato puree till it releases the oil
3)it can help to cook the chickpeas in a seperate utensil while you cook the gravy and at the end mix both and cook for a few minutes.

Just started making a variation of this (similar spices and pepper flakes sauted and I also add coconut milk), pair it with homemade garlic naan. I add some yogurt as a topping.
I’m Mexican but it’s been added to our rotation of home recipes

If u cook the curry base until it releases oil, the flavours deepen and improve significantly 😊 Northern Indians use that cooking technique.

It is so nice to see not just the normal indian spices but also the technique used .. hate when everyone just dumps everything before frying/sauteéing onions and ginger garlic paste

In India we call it Chhola or Chhole (typically eaten with a Bhatura, Poori and often with rice as well). It is very popular all over India, especially among vegetarians
