Some recent viral morel news stories have highlighted the importance of cooking morels well, so however you do it, please do so thoroughly! You don’t eat chicken medium-rare and you shouldn’t have morels that way either. How do you cook your morels?

I kinda use this rule with 90% of mushroom cooking.

Cook out the mushroom’s water content FIRST then add oil or butter to get that crisp going. If you add it all in the pan at the same time, it can have too much moisture and get soggy instead of tender.

fresh butter yes, but if you clarify it (remove the milk solids) the smoke point goes way up so you can still get that butter flavor with being able to really crank in some heat

Dehydration is a good option for these mushrooms. It's shocking how well morels come back after being dehydrated.

!Avacado oil is **NOT** a neutral oil! It leaves a lot of flavor behind, it does pair okay with many kinds of mushrooms, but is not the best choice for morels.

I just dried 3 gallon bags full, did a trial freezing them a few different ways and canned a case of pints. This has been a fantastic morel year!

We cook them in a hot pot soup unique to south east asian countries. Ive only been able to eat this in a home setting. Ive never seen any restaurants serve it that way and its definitely a hidden gem that most will never get to try.

Fun fact!!! It is nearly IMPOSSIBLE to overcook mushrooms! Chitin is the structural material that mushrooms use to build themselves which breaks down at way higher temperatures than the ones found in plants or animals, and typically even exceed most temperatures we cook with :3

We've cooked with butter for years and not gotten sick, but my dad is also a very experienced chef with the knowledge of how to not burn the butter while cooking. If you're an amateur or just want to be safe, this is a very good tip.

I was about to say, my grandmother used to cook the one's we'd find in the woods and they were always so good with some butter.
