Homemade Baozi

As you could tell, my baozis were not perfect. You can watch @小高姐的magic ingredients YouTube video: steamed Chinese buns, for a better detailed tutorial.

Just in case you need it. Here is the recipe I used.
Filling:
500g grounded pork/beef/chicken/lamb
1 tsp salt
100g ginger green onion water
1/4 tsp white pepper powder
1 tbsp light soy sauce
1 tbsp dark soy sauce
1/8 tsp five spice powder
1 tsp sesame oil
5g minced ginger
50g chopped green onions
Mix well

Skin:
Melt 10g sugar and 5g yeast with 270g warm water (about 85F).
Add the yeast water into 500g flour
Add 8g pork oil or vegetable oil into the flour.
Knead the dough for 10 minutes.
Wrap with a plastic wrap.
Let it rest for 1 hour.
My house was at 75F that day. May need to have it rest for a longer time if it’s getting cooler.
Knead the dough again until smooth.
Cut it into 12 portions.
Make baozi.
Let the baozis rest for another 1 hour, they will keep growing bigger.
Steam over high heat for 15 minutes.

As person of northern Chinese descent, thanks for giving this info to your viewers! Northern Chinese cooking and Southern Chinese cooking can vary quite drastically! (Also I’m pretty sure the way to make smooth dough is with cake flour but I could be mistaken. My mom’s baozi dough looks like cauliflower too cuz she uses all purpose flour 😂)

Hi Ms. Shi! Don't worry, your cauliflower dough is just fine!! The secret is to let it rest for an hour when you reach the cauliflower dough stage. Once it's rested, your dough should be soft, and ready for you to kneed it. This is when it turns smooth!! It takes a little while to kneed and become REALLY smooth, (around 5-8 minutes) so if you get tired, you can use a stand mixer. :)

Hi! As a person, (or teenager), from Guang Dong, which is in Southern China, don't worry! My mom's 包子 (bao zi) is also lumpy, like a cauliflower! However, they taste so good! So, after being subscribed to you for almost 2 years, I'm sure it tastes amazing!

I’ve seen people use canned biscuit dough (specifically Pillsbury Grands) for bao and say it works really well. I haven’t tried it myself though.

My grandma always makes me these baozi, and it tastes really good! But, since she makes it with my relatives I don't get it more often now since they fill it up with fish, but she does take some home for me! Using another filling so that I could eat it :)

You've got cauliflower dough because the gluten is only partially activated. You need to knead it longer until it feels tight, springy, and almost starts to tear when it stretches. I like using my stand mixer cuz I'm lazy and like the consistent results.

That looks so great and homemade! I'm always sad Chinese restaurants in US mostly carry southern style bao. I love homemade northern Chinese bao like you'd get from streets in Beijing. Great job!

I like Chinese drama. and I always need to eat there Bao. today I made it. I alter my filling with chicken. but I can't pinch bun the way you did. only one came out nicely 😂

My grandma says your bao looks good! She can make nearly any Chinese dish(I think)

I think you just need to add a bit more water, let it rest a little longer, and that should make it work.
