Picadillo - Stewed Ground Beef with Potatoes

INGREDIENTS:
2 Tbsp of cooking oil
1 to 1-1/4 lb lean ground beef
1/2 a red or green bell pepper, diced
1 small onion, diced
3 garlic cloves, minced
1-1/2 tsp of adobo
1/4 tsp of ground cumin
1/2 tsp of dried oregano
1/4 tsp chili flakes, optional
salt and pepper , if needed
1/4 cup tomato paste
2 cups of water
2 Tbsp manzanilla olives or olives with capers
3 small potatoes, peeled and 1/2 inch diced
INSTRUCTIONS:
1. Heat oil in a large skillet set over medium high heat, cook onion and pepper for 3-5 minutes stirring occasionally. Add garlic and cook for 30 secs.
2. Add ground beef, break it up with a wooden spoon and cook for 8 to 10 minutes or until browned completely. Add adobo, cumin, oregano and chili flakes, stir and mix well.
3. Add tomato paste and mix until well incorporated. Add water, olives and stir. Put a lid on and cook on medium for 10 minutes. Add diced potatoes and cook for 15 minutes or until potatoes are softened and most of the liquid is absorbed. Taste for seasoning and adjust to your liking. Serve with white rice.
