very cool, its essentially carne con papas but I see you add tomato to stew it in for 20 minutes, so, I suppose that makes it different . My carne con papas I serve with gravy over it so its definitely different . Thanks for sharing

Mexican oregano you should crumble in your fingers. I’ve done the same thing, it’s very weird and unpleasant if you don’t. Clumpy ain’t good at all.
