Don’t use just soy sauce. You must use galbi sauce, which is soy sauce based with pear juice and others. Using just soy sauce will make it salty.

an old family recipe we used to do was 7up and soy sauce. The sweetness and citric acid from the 7up helped cut through the saltiness of the soy sauce. We used to do marinaded turkey breast this way, cut up in strips, marinade, grill.

My family actually tend to use italian salad dressing for pork(olive garden's italian dressing is best for this IMO.) and teryaki, A1 or sweet baby rays to marinade beef most of the time. Results may vary but this is from someone who likes to dip steak in ranch dressing.

For the soy sauce, I would recommend a mix of teriyaki and soy, it will help with the salty and add a little more sweet

So to fix the saltiness, take the Riva from the bone and do a desired with the bones; suggestion bake and use for stock. Use the soy sauce as before perhaps less volume, but you should tightly roll and tie the meat to marinate and smoke. Bon Appétit!
