Family is Greek but I live in New England. Hello from Maine where tomatoes aren’t in season in fall and winter. Apples with a splash of apple cider vinegar are a wonderful sub for tomatoes and paired with parsnips instead of carrots- you can add some more fall like spices like sage and clove with the oregano. ❤
