Make this traditional food, giant beans in the oven with tomato sauce and vegetables! It is a fantastic vegan meal.
Giant beans in the oven is a traditional Greek dish. It is very easy to make them as long as we remember to put them in the water to soak one day before.
Ingredients
• 500 g giant beans
• Salt, pepper, olive oil
• 1 onion, chopped
• 1 celery, roughly chopped
• 1 red chilli pepper
• 2 cloves of garlic, roughly chopped
• 2 bay leaves
• 1 tbsp sugar
• 1 tbsp tomato paste
• 50 g white wine
• 400 g tinned tomatoes or fresh blended
• 300 g water
• 2 spring onions
• 1/2 bunch celery leaves
To serve
• feta cheese
• olives
• bread
Method:
1. Soak the beans in a bowl full of hot water and some salt for 12-24 hours. When ready, drain and rinse under running water to remove the salt.
2. Preheat oven to 180-200*.
3. Transfer beans to a baking tray 25x35 cm, add water, little olive oil, garlic and place in oven.
4. Bake for 30-45 min until they soften.
5. Coarsely chop the onion, celery, chilli pepper and garlic. Add them to the pan with olive oil and cook for 10 min, add sugar and tomato paste. Mix.
6. Add the white wine and wait for the alcohol to evaporate. Add the chopped/blended tomatoes, bay leaves, pepper, salt. Mix and cook slowly for another 15 min.
7. Finely chop the spring onions and celery leaves and add to the pan. Transfer contents of pan to a baking tray over the beans and mix. Add the extra water if it needs Cover with aluminium foil and bake for 1 hour /depends from the beans.
8. Taste the beans from time to time. When they soften, remove aluminium foil and bake for 15 minutes.
9. Serve with feta cheese, olives and fresh bread.
