I just popped this in the oven, now I have to wait about an hour or so. But the kitchen smells AMAZING. That spice combination of cinnamon, rosemary, sugar, bay leaf with the tomato paste is INCREDIBLE. I could almost eat it without baking it...

EDIT: It's two hours later, and oh my god... this is amazing. I am eating it with Akis' Greek Pita Bread on the side to soak up some of the tomato and veggie sauce. You guys have to try this!

My grandmother use to cook these beans in the oven and to serve we put some homemade ketchup. It was amazing. One of my good memories of my childhood. 😃

At a tavern near Vikos gorge, after a long day of driving and hiking... Nothing satisfies more than a plate of gigantes! Now I can make these for my girlfriend and her family, thank you for the recipe!

This dish defines our traditional cuisine actually, this and fasolada in my opinion. As for vegetables, you are free to go crazy I've tried the recipe with the addition of leeks, peppers, swede, turnip. Do not be afraid of garlic, Akis mentions it as well, the garlic is cooked for quite some time so it really leaves a sweet taste you can add more than 2 cloves of garlic. It's cheap, it's delicious and frankly it's a great dish for days you wish not to consume meat/fish. As for the side dishes, definitely feta cheese, olives and sourdough bread <3.

Had to make literally the day after I returned from my honeymoon in Greece. My wife loves this dish and this recipe worked out really well.

I am Greek but I have lived in the UK for 19 years. The is a dish I made very often, and I have used a different veg combination every time from leeks, parsnips, squash, courgette, aubergine, whole baby tomatoes, fennel etc. If you cannot find the Greek beans you can also use butter beans or cannellini. Just adjust the cooking time in the oven for the cannellini as they are smaller and can be over cooked.

Colin here from Scotland….. I am growing Greek Gigantes beans in my polytunnel…. def needs a warm start here in cold Scotland… got these seeds from the excellent Real Seed Company…. not F1 seeds so can keep some for planting next year….they grew really quickly and am hopeful I will get a good harvest…. will try planting some outside in mid May ( hail here yesterday on 15 April !)…. know that must be cooked before eating and will store well after drying…… thanks for this excellent video …. am looking forward to cooking this Greek classic for my veggie partner… and of course
