So what is “lechon”? Lechon is derived from a Spanish word that means roasted suckling pig. It is usually served during special occasions and is one of the most popular dishes in the Philippines. This slow roasted pork has a juicy and tender meat that anyone can enjoy. Today we’re learning from chef Javier to make the best LECHON from scratch. Chef Javier of Kuya Ja is a well respected chef and an entrepreneur originally from the Island of Cebu in the Philippines. Not only is Cebu well known for its beauty, the island is well known for having the best Lechon in the world.

In 1991, chef Javier moved to the US where he graduated from L'Academie de Cuisine and spent years working in different restaurants to deepen his knowledge for cooking. After realizing that DC lacked the true Pinoy food representation, he went back to Cebu to master how to make Lechon, named the “best pig ever” by Anthony Bourdain. We’re going to be stealing all the juicy, meaty secrets on how to make this dish the real Filipino Cebuan way.

Secret to Making The Best Lechon:

#1- Make sure the skin is COMPLETELY DRY. Drier the skin, the crispier the result.

#2- Bruise the lemongrass and scallions to bring out the flavors.

#3- Bake in the oven initially at 450 Fahrenheit for 30 minutes, and then 350 for 2:30-3 hours for crispy outside, tender inside.

In my Cuban family we typically serve lechon at Christmas/Thanksgiving and it’s pretty similar except we use a whole pig

As a Puerto Rican, we make lechon for every holiday or every family gathering. We make it without the soy sauce. Looks tasty though.

Some people don’t realise how similar Spanish and Filipino pork is. Spain has a really big influence over Filipino food culture due to colonisation but with their own unique twist

Lechón, similarly to the chicharrón, is not just found in Filipino cuisine, but also Spanish (duh) and therefore Latin-American.

We have similar roasted pork in Italy too, check out the traditional porchetta from Rome
