Salt immediately after they come out of the oil. For style points, use salt that has been powdered in a spice grinder.

Don’t forget to toss them with “chip salt” while they are still wet. 50% salt, 50% white pepper blended to a powder and sprinkled liberally. Also, on the second cut on the ripples, turn them 90 degrees for a cross-hatch effect.

Can be made oil free still super crispy in the microwave. Much quicker, way less energy used, way less effort. That‘s for small portions, like as many as you can spread side by side on a plate (on non-stick paper). So I make them whenever I like quickly, just from one potato. I make the slices with the peeler, quickly done and no additional washing up to do.
