What I eat as a vegan! Some random days, some random thoughts.

Recipe for the morrocan inspired stew:
1. We will make the broth first by sauteing 1 onion, 1 clove of garlic in 3 tbsp olive oil. Then we add all of our spices: salt, 1 tsp cumin, 2 tsp turmeric, 1 tsp harissa paste, 20 g tomato paste, 2 cinnamon sticks, 2 anis stars and saute for another 3-5 minutes. Then ypu'll add 400 g of vegetable broth and let everything simmer for at least 10 minutes on very low heat (the longer the better).
2. Then I'll cut my veggies (I used carrot, beet & parsnip) and saute for around 5 minutes in some more olive oil.
3. Add the chickpeas and add the homemade aromatic broth, let everything simmer for around 25 minutes or until the veggies are cooked through. Finish everything with some freshly squeezed lemon juice & some cilantro.
Recipe for the protein pancakes (I eyeballed everything but here are some rough measurements):
Combine 3 tbsp oat flour, 2 tbsp almond flour, 2 tbsp protein powder, 1/2 tsp baking powder, pinch of salt, 1 tbsp oil, plant based milk until you reach a fairly thick consistency & sweetener of choice. Then cook over low to medium high heat.
Recipe for the tortellini soup
2 tablespoons olive oil, 4 garlic cloves, 1 medium-sized leek, 1 x 400 ml can of coconut milk, 250 ml vegetable broth, nutritional yeast, 1 x 250 g package of tortelloni, 150 g peas
1. Heat the olive oil in a pan over medium heat, then add the garlic and leek. Sauté for about 7 minutes.
2. Next, add the coconut milk and broth and bring to a boil. Then add the pasta and peas and simmer until the tortellini are cooked through.
3. Season with basil (optional), lemon (optional), salt, and pepper.
