One of the things we really stressed when we trained knife drills is to expect to get cut somehow. A sudden cut on the arm or hand can be surprising, and that surprise can be what ends up killing you. It's better to take a cut below your elbow than it is to get cut or stabbed in your torso. If you expect it, it hopefully won't shock you as much if it happens.

One problem...I have been involved, regrettably in 6 knife fights and every time I got injured, one of those times almost died and didn't realised I got stabbed until it was over and "dust " was settled.( part of the job) and yes... I do, like many others, have a background in judo and boxing. Thing is the knife hand stays BACK in most cases and the distance control arm is in front. .The knife hand becomes a sewing machine while the other arm is used for leverage and distance domination. In the real situation everything happens very fast and is very messy.
Effective for a knife is a force multiplier.: gun or a big reliable object between you and that hand holding the blade if you cannot bolt from there and run for your life.

The main problem is that there is no guaranteed successful strategy against a knife. So there should not be a strict decision to either go with two hands for the weapon hand or to attack him. One should train a few different methods so that he can adapt.

I wear a knifeprotection suit evenings when I go to work and I have also specially designed gloves for knifeprotection. Think pro active like the agressor and you will be more prepared. And one more tip get a pepperspray that could a deterr an eventual attacker. Once youre stabbed its too late regret that you never a bought a protection vest.

I'm gonna say (with real street experience) the first thing you want to do is, get out of the path of the knife travel with awareness. People who draw knives mean business they will thrust that through you. Like in the movies where there tussle over the weapon and dude just overwhelms them with that final thrust

Then, make an attempt to control the weapon if you're not able to get away of have consciously chosen to fight

Gong Fu, Kung Fu, Brazilian Jujitsu, etc., etc., none of those martial arts, especially the ones that promote lame self-defense techniques like this, are going to save you in a real world situation. The best martial art you can learn that can help you in actual real world situations is Boxing. If you want to take it a step further you could add Wrestling to the skillset. Boxing and Wrestling compliment each other in a street fight very well and together can help you end a situation before it gets out of hand.

Look at this guy's knife-arm restraint technique. If the guy is trying to stab you, putting yourself directly over the blade the way he does is incredibly stupid. What if you trip? What if the guy with the knife decides to kick your leg out or step to the side? All he's doing is holding your wrist and elbow, assailant still has most of his movement. He can also just slam his knee into the bottom of his hand to break the hold he has on the knife arm. There's many ways of getting out of that guys hold.

Look at 0:23 . What's stopping the assailant from just pivoting slightly and getting him in a headlock? The "Sensei" has his arm in the guys forearm pit, but he's not doing much to stop it's side to side motion. That's solely to stop the blade from coming upwards. Likewise he's holding the arm still, not the wrist. The assailant in this shot has enough freedom in his wrist to cut the guys inner arm with a blade that long. Not to mention your assailant isn't going to come at you as half-hearted as this guy is. If some dude has a knife on you in the streets he's looking to kill you, he's not gonna just let you manhandle him like this guy does for demonstration purposes.

Moral of the story, don't lean into the deadly weapon. Also, if someone pulls a weapon on you the best thing you can do is comply. You're not being paid enough to be the hero.
