as a kid I had liver and onions, then they (hunting party) snuck in the heart meat and told me afterwards. What they, and I didn't know was that meat was dam near the best meat I had ever eaten, and to there amazement I dove back in for more! I was 11 at that time. Now my kids love it too. (only in the field after a really long hunt will I eat liver though, lol, go figure;^)

If they like heart, more power to them. As for me, I leave the heart and liver in the woods where I field dressed the deer (or moose). After all, the coyotes and ravens have to eat too.
