He's right about the not getting the potatoes water logged.  That is why I cook my potatoes for gnocchi in the microwave or bake in the oven.

i'm italian and this guy is making gnocchi better than 90% of italian mothers, after all just because someone is italian and live in italy doesn't mean they know how to cook thing properly. One example is Pasta alla Carbonara, a dish 98% of all italians grandmothers, mothers, cooks and what not make then wrong way

Chef, could I use a grater instead of a ricer or would that ruin everything? Cause I don’t have a Ricer nor do I know where to buy one, our local malls’ don’t have them. Thanks :)

You forgot to mention which potatoes are better for gnocchi, red skin (desiree in the UK) potatoes are the best for their texture. Word of Chef Massimiliano.

yeah great advice, just how the professionals make it..
i find gnocchi a little heavy though..
the traditional and my fave sauce is with:

1) olive oil
2) garlic
3)basil herb
4) some chilli powder
5) small amount of minced pork meat
6)1 tin of chopped tomatoes
7)small cup of fresh cream
8) small cup of baby peas
Pepper basil and Parmesan cheese topping
btw, the sauce should have an orange colour
serve piping hot
