I did this last year for Christmas, minus the stuffing and vegetables. It was a fun experiment. Highly recommend it!

Great video.. I normally do my rib roast rotisserie style over charcoal on the kettle, but this past Christmas, i did a 3 rib roast with all the normal Christmas seasonings sous vide, and seared in cast iron. Was BY FAR the best rib roast i've made. I've done a lot of meats sous vide over the past 4-5 years, but never a roast.. It was a game changer.

Looks great Morrison. I’ve done 2. Last one at Christmas 2021. Best yet. Cooked around 300F in offset with pecan logs. Heavy coat SPG, basted every 30 min with herb butter. Cooked to 125F. Rested 30 min.

in terms of vegetables, I would suggest adding to the pan.
3-4 quartered tomatoes, as well as 1-2 fennel, quartered as well and, if you like it, some broccoli. Add in during the cook so that it has about 1.5 to two hours...

My best rib roast was probably this past Thanksgiving. Smoked it with salt, pepper, thyme and rosemary, then I put it into the oven to broil for a few minutes. Served it with a huge spread for 18 other people

Whole rib eye piece on the spit. Nice bark nice color i had on it. It was wonderfull.
