Fun fact! FODMAPS are water soluble, not oil soluble, so garlic oil is safe for people who otherwise can’t have garlic because of fructans! Life is hard without garlic.

You really need to be careful about how long you keep raw garlic in an anaerobic environment i.e. Submerged in oil (minced or pureed with oil). Garlic naturally contains botulism spores, it's a low acid food, and submerging it in oil creates an anaerobic environment. This is the perfect breeding ground for botulism.

When making garlic oil make sure you store it in the fridge. Unfortunately, garlic oil has had a history of harboring botulism. Botulism survives outside of oxygenated environments. The oil acts as a seal around the individual cloves basically creating an oxygen-free environment. Blanching your garlic cloves first or cooking it in the oil can reduce the risk, But making it in small batches and keeping it in the fridge is better

I feel like it's vitally important that you should tell people that you need to keep that garlic in olive oil in the refrigerator right away, otherwise you've introduced a non acidic food into an oxygen-less environment and there's a good chance you'll develop botulism.
