INGREDIENTS for the Berta Jay's
SIMPLE 4-BEAN SALAD
---------------------------------------------------------
1. In a bowl, mix together
1 cup green beans - I used fresh but canned, drained & rinsed green beans are good, too
2. Drain and rinse the next 3 types of beans
½ cup cannellini beans - any white bean or chickpeas would also be good
3/4 cup waxed beans
3/4 cup dark kidney beans
1 sweet mini red pepper sliced - sliced regular-sized red pepper is also good
1/3 cup chopped onion - I used a ¼ of a small Vidalia onion
1/8 cup of chopped scallions or green onion
1/8 cup of finely chopped celery
3. Stir these ingredients together well and set aside.
4. Into another smaller bowl, add:
1/3 cup of apple cider vinegar - I used Braggs
1½ tablespoons wet sweetener - I used maple syrup
1 tablespoon dry sweetener - I used xylitol
¼ teaspoon salt
12 turns of black pepper mill
5. Mix well.
6. Pour the vinaigrette over the set aside bean mixture
7. Cover and place in refrigerator for 8-12 hours to "marry" the flavors; overnight is good.
8. Take out of refrigerator.
9. Enjoy! 🤗

My objective for this channel is to share with others what I have learned over the last 30+ years about living and eating healthier. I share my knowledge with my small circle of friends all the time. I am not a doctor, nor do I hold any type of medical degree, but I believe that my tried experiences may help someone else.

For over 30 years I have used every diet imaginable to lose weight, but I confess that I am now at home using the vegan lifestyle. I want to share what I have learned about eating and enjoying food. And, since I am still learning how to be more consistent with this lifestyle, I have decided to eat more healthily, realizing the weight will come off eventually. Though I have not reached my goal weight, I know that sharing with other people in front of a camera with help me to stay on course.

I have, with the help of my husband of 37 years, raised 3 grown children. I will also share some cooking shortcuts as well as some natural formulas I have used and still use for everyday problems.

This will be a MUST TRY for me. I love any kind of bean - fixed just about ANY way. I make bean salads all the time - especially in warm weather - b/c they're so easy, so healthy & SO delicious. They're practically a bowl in a meal. I think I have everything to make this right now except the Vidalia onion. And celery [which I almost ALWAYS have]. Will add to my grocery list. Thanks for this one, Berta. Anything BEAN is right up my alley! Yum.❤️🥕❤️

Gotta try this because I already add 3 bean to my chopped salad on a daily basis. I usually buy 4 cans per month. But now I can make my own. Thank you Berta Jay!!! 🕺🎉💕

Looks a great low fat high protein moderate carbohydrate Vegan salad, a must try. I'm in England and would perhaps have to search for one or two of the ingredients but will have a go 💛

Hi Ms Berta! I'm having to play catch-up on trying recipes but your 4 Bean Salad is definitely a keeper! We all enjoyed it very much! I'm looking forward to the different side dishes in your videos. We always look forward to the big holiday meals with family who visit during the holidays, but I really enjoy the side dishes and the creativity whether it be a different combination of ingredients or a different method of preparation. I would swap garlic chives for the scallions ... Just because I grow them ... I use honey for sweetness and brer rabbit for a little bite ... Might have to try syrup ... Next batch ...

Love this. And you look so pretty with the scarf. Interesting you use both wet and dry sweeteners. I thought I was the only one who did that haha. I use agave and stevia in my oatmeal. :)

Great recipe! Can’t wait to try this, the addition of celery is a great idea! I definitely will need to get my 1/8th of a cup scoop out of the coffee canister!😳😂
