EASY Green Beans Almondine || Berta's Holiday Sides

INGREDIENTS for the Berta Jay's
Green Beans Almondine

PREHEAT OVEN to 375°F
1. 3 cups green beans
Cut into 1 inch pieces
Steam for 5 minutes
2. 1/3 cup of sliced almonds
Place on a parchment lined baking sheet in a single layer
Bake in preheated oven for 4 minutes
Stay close so that almonds do not burn but get a little brown
3. 3 tablespoons vegetable broth
Place in a fry pan and bring to the boil
Add 1/3 cup chopped mushrooms (I used shiitake) and 1/3 cup chopped shallots
Cook for 5 minutes
4. After green beans have steamed for 5 minutes,
Place them in an ice bath (cold water + ice cubes)
Set aside.
PUT ALL THE PIECES TOGETHER BY:
5. Add the toasted almonds to the mushroom mixture in the fry pan and cook for 1-2 minutes.
6. Drain green beans from ice bath and shake off any excess water and
add them to the mushroom, shallot and almond mixture, then,
7. Add 1/8 cup (2 tablespoons) of pure lemon juice, 3/8 teaspoon of salt, and 1/8 teaspoon of ground black pepper. Reduce the heat to medium/low.
8. Stir well for 5 more minutes until all ingredients have been heated through.
9. Serve hot and enjoy!

My objective for this channel is to share with others what I have learned over the last 30+ years about living and eating healthier. I share my knowledge with my small circle of friends all the time. I am not a doctor, nor do I hold any type of medical degree, but I believe that my tried experiences may help someone else.
For over 30 years I have used every diet imaginable to lose weight, but I confess that I am now at home using the vegan lifestyle. I want to share what I have learned about eating and enjoying food. And, since I am still learning how to be more consistent with this lifestyle, I have decided to eat more healthily, realizing the weight will come off eventually. Though I have not reached my goal weight, I know that sharing with other people in front of a camera with help me to stay on course.
I have, with the help of my husband of 37 years, raised 3 grown children. I will also share some cooking shortcuts as well as some natural formulas I have used and still use for everyday problems.
