For the ossobuco meat:
300 g veal ossobuco
1 carrot,
1 celery stick,
1 spoon tomato paste
70 ml white wine
extra virgin olive oil
30 g butter
salt and pepper
80 g grated parmesan cheese
80 g mascarpone cheese
fresh parsley, finely chopped
lemon zest

For the pasta dough:
300 g 00 flour
2 eggs
6 egg yolks

Saffron fondue:
500 ml cream
150 g parmesan cheese
1 g saffron threads

Gremolada:
Lemon zest
Parsley
