Combine your water and lemon juice which will be used as coagulant.
Heat your soy milk until it boils and be sure to constantly stir. Remove from the heat and stir for 1-2 minutes.
Stir half of your water and lemon mixture into the soy milk. Stop as soon as it starts to thicken so you don’t break the curd.
Add the rest of water and lemon mix and stir gently back and forward until more curds starts forming.
Let it sit for 15 minutes until the liquid separate completely. “Add a few extra drops of lemon if still not solid (write)”
Prepare a colander with a few layers of cheesecloth over a bowl. Pour your mixture and Carefully pull up the sides of the cloth to allow most of the water to drain out.
Untwist the cloth and re-wrap the curds so that it forms a loaf shape and place a weight on the top.
Let it sit for 15-30 minutes, remove the cheesecloth and let it sit in cold water for a few minutes.
Enjoy it with your favourite meal!
5 cups plain soy milk
1/2 cup water
1 1/2 tablespoons lemon juice
