You can absorb less carbs at higher intensity, this is why those cyclists are taking it BEFORE the climb. Your intuition about taking more carbs at higher intensity is not exactly right... Also taking in different sources of carbs will increase gut stress. Your best off making the simplest nutrition possible. Sucrose+sodium citrate. I would highly recommend you reach out to Dr Alex Harrison, the creator the Saturday app...
