Perfect. So many chef’s overdo ratatouille - for me it is a simple prep. that uses vegetables when there are an abundance or even over abundance. Cut them up, saute them, make a simple tomato sauce and done. Good evoo, and then I like mine with parsley and finished with Parmesan and crusty bread.

I recently finished an Anthony Bourdain episode where he had gone to Provence and made ratatouille that looks exactly like this. And then he was told, "it's nicely cooked vegetables, but it wasn't ratatouille." So which is it?😂

Regardless, this is far simpler than I thought it was. And so healthful. It would be lovely to make now, but with perfect vegetables in the summer, wow 🤤

Would white Zucchini (which is just a light green Zucchini) be a better option then a regular Zucchini if you can't find the trumpet?

Reminds me of a Mexican dish made with tomato, onion, garlic, zucchini, peppers, and squash. I think I’ll start calling it Mexitouille. :) I think the only difference is it uses squash instead of eggplant and the pepper isn’t sweet. It’s a little bit spicy, long, and yellow but I don’t remember the name. It’s been a long time. I used to put a sprig of cilantro last 10 mins but I don’t know anyone else who did. Also, when served, sometimes queso fresco is crumbled on top. Bet it’s an adaptation of the actual ratatouille .

I made it! and it turned out perfect! The recipe in the Pixar movie is not as good. I tried it before and found that the sliced ​​ingredients placed in that way don't allow the tomato sauce to penetrate better, plus the tomato slices add extra acidity. This version is much better.

I so want to pair this with a freshly baked brioche baguette. Maybe even incorporate some grilled chicken breast and smoked sausage (not andouille as my brother has a heat tolerance that makes Cajun food torture to him)

I love this video and the recipe. Just dont get how it originated in France considering these ingredients are native to Americas. We've been eating Calabacitas for centuries and similar squash, pepper tomato base dishes for thousands years.
