Make a Popeyes-Style Chicken Sandwich but 10x Better

Here's how to make a Popeyes-style chicken sandwich at home but 10x better.

Step 1: Prep Your Chicken
Add boneless, skinless chicken thighs to a wire rack. Salt cure both sides with kosher salt, light brown sugar, and baking powder.
Place in the fridge to cure for at least 4 hours or overnight.
Step 2: Make Your SauceMix together some mayo, salt, grated garlic, fresh lemon juice, celery seeds, chopped dill pickles, and pickle juice.
Set aside while you finish making your chicken.
Step 3: Drench Your Chicken
Grab 2 large containers for your dry and wet mixtures. Into one add flour, salt, smoked paprika, cayenne, black pepper, and garlic powder, and mix well.
To the other container make an egg wash with some beaten eggs, buttermilk, pickle juice, and hot sauce.
Fully coat your chicken in the flour mixture, followed by the egg wash, and back into the flour. Repeat until every piece is fully coated.
Step 4: Fry Your Chicken
In a large pot or pan, heat some neutral oil to 350º. Fry your chicken a couple of pieces at a time so you don't overcrowd the pan.
Fry for 5-8 minutes or when your internal temperature reaches 175º-180º. Let drain on a wire rack and repeat until all of your chicken is fried.
Step 5: Assemble Your Sandwich
Add a little mayo to the inner sides of your buns and pan-fry until they're golden and crispy.
Add some of your homemade sauce, a few pickles, and your chicken. Top with the other half of the bun and dig in.
Don't get me wrong— the Popeyes sandwich was fine, but there is no touching the homemade version. Definitely give it a try and let me know what you think.
