Popeyes Crispy Chicken Sandwich

The Popeyes crispy chicken sandwich is the best. In my humble opinion, absolutely nothing comes close in the fast food world. Yet, even if you don't agree with me on this, there's one thing we can hopefully agree on: we can make it better at home. Yes, I said "we" -- that means YOU. So today, we've made a homemade crispy chicken sandwich with a few simple twists that bring it to a completely new level. Popeyes chicken has a unique crumbly and crispy texture around the edges, and I've worked to figure out exactly how to replicate this. And I love it so much that I'll likely be using this method from this point forward in the kitchen whenever making a chicken sandwich. Ingredients are as follows:

Buns
2 tbsp bread flour
1/4 cup whole milk
2 tbsp water
3/4 cup whole milk (warm)
1 tbsp active dry yeast
2 1/2 tbsp sugar
3 1/4 cups bread flour
1 1/2 tsp kosher salt
1 large egg
1 egg yolk
3 tbsp butter
Egg wash

Crispy Chicken
3 boneless skinless chicken breasts
1 cup buttermilk
1 cup pickle juice
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp pepper
1 tsp salt
1 cup potato/corn starch
1/2 cup all-purpose flour
Frying oil
Pickles (for topping)

Mayo
1 cup mayo
2 tbsp chives
1 tsp lemon zest
1 tsp salt

Step 1 add lukewarm whole milk to a mixer, step 2 add 2 tablespoons of sugar, step 3 whisk, step 4 1 tablespoon of active dry yeast and whisk evenly, step 5 let sit for 5 minutes, step 6 add 3 an 1/2 cups of bread flour, step 7 add salt, step 8 mix, step 9 add 1 egg and 1 yolk, step 10 mix, step 11 add in 3 tablespoons of cubed butter, step 12 remove dough from mixer, step 13 put your dough is a greased bowl, step 14 cover dough with a damp towel and let rise for an hour and a half or so,
