Making Creamed Honey With Seed Honey!
Hot Honey is all the rage right now. Once people experience the spicy deliciousness of Fire Honey on fried chicken or hot biscuits, they realize they have been doing it wrong all of their life. Our version of this produce, Fire Honey, has been a very popular product with our online and direct-sell customers for over a year. However, I have never been convinced that I was making it as good as it could be done. My final recipe, as shown in this video, is the answer to all of my concerns.

Using a capsaicin harvesting method developed through a lot of trial and error, I finally stumbled on a method that provides the great heat, without the terrible flavor afternotes typical with most pepper extracts. Take a look at this video and let me know what you think. Thank you for viewing,

Thank you for sharing this! We have just made our first test of hot honey. I used dried jalapeno flakes from peppers I grew last year by simply letting them "steap" in the heated honey for 10 minutes. It turned out good. Your wisdom in creating an "oil" is awesome. Plus, I didn't know how to do that. It will come in handy when making my pepper jellies also. New subscriber and anxious viewer here!! Thank you again for sharing your technique and wisdom!

Mr.Phil! I noticed you made a mistake in dosing the vinegar & capsaicin oil.
In the third jar, you put only 1 scoop of vinegar.
In the second jar, you put 3 syringes of capsaicin oil. This will affect your test results!

A tip to lower moisture content of honey is to put an open container of honey in a food dehydrator at 95F. check the moisture hourly with a refractometer because taking honey below 15% moisture causes more problems.

Have you ever mixed honey with hot sauce? I have been experiementing with mixing my hot sauce with honey and have had good results but I am not sure how it will hold up long term. I am thinking it will need to be refrigerated once. The pH is reading at 3.7.

What if you hydraulic press the peppers and then let them dry out after saves from scraping the oils manually.

Couldn't you use a juice sentrifuge or something like that to get all the juices out and separating the pulp and seeds?

Hello Phil, I enjoyed the video and I subbed. I'm wondering does the honey have a tasty pepper flavor using this method? Also one downside I see with this method is the pasteurization does reduce the enzymes and nutrients that many people associate with raw honey. I watched your video on How to Make Fire Honey. How are you controlling the moisture on that recipe? I tried that method in the past and my honey became liquid like water, greatly exceeding acceptable moisture content, afterwards I learned that dehydration is a reasonable solution. Good info though.

I had to leave the barracks when my fire fighters roasted peppers.
