Canning dried beans can help you to save money and will cut down on the amount of time it takes to make dinner. Pressure canned beans are ready to use right out of the jar!

INGREDIENTS:
5 pounds of dried beans for about 7 quarts
1 teaspoon canning salt per quart
boiling water to fill jars before processing

Pints: Process for 75 minutes at 10lbs (0-1000ft elevation; above 1000 = 15 lbs)
Quarts: Process for 90 minutes at 10lbs (0-1000ft elevation; above 1000 = 15 lbs)

I noticed you used the pressure canner to soak the beans and then (in the video) after placing the beans into the jars, you placed the pressure canner onto the stove. You did not mention however, if you cleaned or rinsed it out. It would seem to me that it would be unsafe to pressure can in a dirty pot. Or did I miss something?

I'm at sea level. I only have an Instant Pot Max. It only has like 6 or 15 psi. No 10 or 11. I've noticed with potatoes, they come out way to mushy and smell at 15 psi. What do you recommend? I want to get a pressure canner like yours, but those scare me. LOL. Can I use 15 psi at sea level or will the beans come out bad?

I use my tea kettle to add the hot water. It is faster than ladling in the water.
